No it's not steak...

Well I know it's hard to believe but I do cook something besides beef sometimes!
Today was one of those days. The kids and I went to a local apple butter festival and had a great time but after a long day in the cool weather I didn't feel like spending a long time cooking dinner. On the way home I started thinking about soup...maybe potato soup. So I did just that...with a twist. A good one so I decided to share it with you even though it is "off topic"!
Saute 1/4 c sweet vidalia onion, 1 clove garlic until tender. Add two slices prosciutto (cut into smallish pieces). Add three small potatoes cubed, one stalk celery diced, about 6 c water or chicken stock, I also added four cooked chicken wings. Cook for about 20 minutes then add a small handful of fresh terragon, a few sprigs of fresh dill, four tbsp sea salt, 10 peppercorns, 1/2 tsp freshly ground pepper, 1 c fresh mushrooms, 1 c buttermilk, 1 c heavy cream, 2 tbsp philadelphia cream cheese. Simmer until slightly thickened. Meanwhile prepare homemade croutons. I used homemade sour dough bread with fresh organic butter then toasted in oven til hard. Plate soup, top with several croutons and grate fresh smoked gouda cheese on top.
Absolutely delish!

Tailgating...a great American past time

We are well into the football season now and I can't help but think about the variety of foods cooked up in makeshift cooktops, portable grills etc. on game days. Guys who never cook another day in their lives get excited and have their own "routine" for game day tailgating. I love that the food is unpretentious and creates a sense of comraderie among fans.
BBQ beef is a perfect recipe for tailgating. Once cooked it keeps perfectly in a crockpot to keep warm for hours of snacking. Visit http://www.steak-pro.com/PerfectSteakRecipes.html for more game day recipes.

Sliced mushrooms sauted in butter and a nice cabernet, mmm.
Baked tomatoes stuffed with homemade bread, olive oil, parmesean cheese, salt, pepper, and smoked salmon.
Sauted spinach with olive oil and garlic.
Finished with homemade lemon ice cream and short bread cookies.

Saratoga Wine and Food Festival day 2

Ahhh the gala.
Friday night's gala event wasn't one of those stuffy "my god the sequins on this dress are scratching my arms type...cocktail attire and of course some aren't sure what that is so there are always a few that show up in capri's and sandals and a few that want to parade in sequins but hey to each is own. Right?

Held in the beautiful hall of springs at the Saratoga State Park the gala was more of a friendly wine and food party. Delectable hor d'ourves aptly placed on tiered presentation stands allowed for great movement throughout the hall. A wonderful tomato and mozz with arugula salad was one of my favorites of the night.

Tables of wines surrounded the perimeter of the hall with knowledgeable and friendly and some funnier than others wine reps on hand to educate, socialize, and drink!

Everyone who either is or thinks they're someone in Saratoga was there. I'm not going to mention names but trust me they were there! And it was a great time. It's a good sign when as soon as you walk through the door you're handed a glass of Prosecco.

Saratoga Wine and Food Festival 2009

This year's wine and food fest in Saratoga was a wonderful celebration of food and wine. Sponsored by the Italian Trade Commission Sept 10, 11, & 12 the event showcased the best food the Saratoga area has to offer as well as imported Italian meats and cheeses. Now let's not forget the wine...Thursday began with fine wine featuring Italian-inspired food paired with Italian wines.

I chose Prime at Saratoga www.golfsaratoga.com/prime.html ...
always a great view of the golf course at dusk and good food. Angelo (Prime's owner) made his rounds to the tables throughout the evening; doing his best to ensure a great meal and atmosphere for everyone. I had the pleasure of sharing a table with Angelo and his helpful "right hand" assistant Lauren along with Neil and Jane Golub CEO, President and Director of Vendor Programs of Price Chopper Supermarkets http://www.pricechopper.com A couple of others included an older man who remained completely silent throughout the entire meal...that may have been due to the non-stop chatter and brown-nosing attempt of his female companion (a sales associate for Davies furniture).

The five course dinner began with whole prawn with lobster sauce and a mini (they called it a micro) salad and green salsa. This was a great introduction not all the remaining courses were able to hold up to.

Next duck confit cannelloni with to die for goat cheese. This absolutely melted in my mouth, the description should have read "best damn goat cheese ever, just eat it!"

Third course, seared alaskan cod with a broccoli smear and poached fingerling potatoes...the best I can say about it is blan. It reminded me of the food at Melman's Cafeteria my grandma used to insist my cousin and I take her! First of all, why cod? There's an entire world full of fish out there and they chose cod! Why oh why? How about Sea bass and let's kick it up a notch...do something to it besides searing in olive oil...a fish with some flavor can handle a simple preparation but cod...No.
And a broccoli smear...looked nice on the plate but it really didn't do anything for me. I was disappointed and was searching for more but NOT more cod.

Onward...rack of lamb with a flavorful crusting of herbs on the edges, cannellini beans and an unusual combination of sweet mostarda fruits and venison sausage stew. This was a surprise with an unusual combination of flavors and atleast made me think about it a little.

Finally strawberry tiramisu concluded the evenings presentation. Overall the food was presented beautifully and as stand alone dishes each (besides the cod) deserves a place on the menu I'm just not sure they were an ideal combination for one meal. The Mauro Sebaste wines were supurb and perfectly paired with each course. I'll add the wine list soon so stay tuned!
