STOP! Don't ruin another steak! Try one of my rib eye steak recipes.

My rib eye steak recipes are some of my favorites; this cut of beef is full of flavor and GREAT prepared over the open flame of a grill.

Sit back & relax while you sift through a few "new" recipes. Enjoy, get a little excited about going shopping for the right cut of steak & plan your next family favorite!



Perfectly Simple: Brush room temperature steaks with olive oil, sprinkle with smoked sea salt and freshly ground pepper. Grill to your desired doneness (refer to steak cooking temperatures chart).

Potatoes: Peel and boil white fingerling potatoes and one clove garlic til tender. Drain then add ¼ to ½ cup heavy cream and 2 tablespoons unsalted sweet cream butter. Mash (Use a hand masher rather than an electric mixer.) until smooth, finish with a dash of sea salt and fresh ground pepper.

Baked onions: Peel cipolline onions and pierce tops with short slits with a knife. Place in a non stick baking dish and pour approximately 2 tablespoons of heavy cream over each onion. Bake in a 350 degree oven til golden and tender. Sprinkle with freshly grated parmesan cheese then return to oven and bake til cheese is golden.

Chopped Green Salad: Fresh organic lettuce, carrots, & tomatoes (from local market) Keep it simple.

Dessert: Lemon-Blueberry Cake 3c cake flour, 3/4 tsp sea salt, 1/2 tsp baking powder, 1/2 tsp baking soda, 3/4 c organic unsalted butter, 1 3/4 c sugar, 1/3 c fresh lemon juice, 2 tsp lemon peel, 4 organic eggs, 1 c buttermilk, 2 c fresh blueberries

Combine dry ingredients then add butter til crumbly, combine wet ingredients then add to dry ingredients. Add blueberries.

Pour into greased pan and bake for about 45 minutes. Turn out onto serving platter, taking care to scrape bottom of pan if necessary to release any blueberries that may have stuck to pan.

Meanwhile simmer 3/4 c blueberries with 2 tbsp sugar, 1 tsp vanilla, 1/4 c lemon juice and 1 tbsp butter. Mash blueberries with hand masher then strain and discard skins. Pour liquid over cake then dust lightly with powdered sugar. Serve immediately. Hint: homemade vanilla ice cream makes a great compliment to this cake.
