Pumpkin pie recipes and pumpkin cake make great desserts during cool weather.
Pumpkin pie recipes and pumpkin cake are simple and delicious.
The following flavorful and moist pumpkin cake recipe is one of my favorites.
2 1/4 c flour
1 1/2 c dark brown sugar
1 tsp baking soda
1/2 tsp baking powder
1 tsp cinnamon
1/2 c buttermilk
1/2 c butter
3/4 c cooked pumpkin
1 1/2 tsp lemon zest
2 organic eggs
Combine wet and dry ingredients separately. Then gradually add dry ingredient mixture to wet ingredients.
Add to a prepared pan, either two 8 inch pans or one 13 x 9 inch pan.
Bake for about 25 minutes or til center is firm.
Cool. Then finish with a lemon drizzle or lemon frosting.
Lemon drizzle: 1/2 c fresh lemon juice, 1 tsp lemon zest, approximately 2 cups powdered sugar. Combine to a syrup consistency, adding more lemon juice or sugar as needed for consistency.
Lemon frosting: 1/3 c organic unsalted butter, 4 c powdered sugar, 1/3 c fresh lemon juice, 2 tsp lemon zest Serve with a tablespoon freshly whipped cream.
