If you're looking for a good cake recipe...this is it.
Lemon Blueberry Cake 3 1/3 c cake flour 1/2 tsp salt 1/2 tsp baking powder 1/2 tsp baking soda Combine dry ingredients.
1 1/2 sticks organic unsalted butter 2 c sugar 1/3 c lemon juice 1 tsp lemon zest 4 organic eggs 1 c organic buttermilk 2 1/2 c blueberries
Combine wet ingredients, then fold in blueberries. Grease and flour two 9 inch pans, lining bottoms to prevent sticking. Bake at 350 for about 35 minutes.
Meanwhile, cook 3 c blueberries smashing with a hand masher then strain and discard skins. Add 1/4 c sugar and 2 tbsp lemon juice stirring to combine with blueberry juice. Drizzle over warm cakes. Sift powdered sugar lightly over cakes and serve immediately.
