Beef roast recipe that would make grandma proud.

Make Grandma Proud,

2 lb. beef roast (rump or sirloin tip preferred)
1/2 c. olive oil
1/2 c. sweet vidalia onion chopped
1 c. celery chopped
1 c. carrots chopped
1 c. potatoes coarsely chopped
1 c. bak choy coarsely chopped

small handful of freshly chopped parsley
2 tbsp. balsamic vinegar
2 c. grape juice
3 c. water
2 c. hunts tomato ketsup
4 bay leaves
5 freshly chopped sage leaves
1 tsp. freshly chopped oregano
freshly ground pepper

Heat 1/2 the oil in large pan, add thawed roast.
Brown on all sides. Remove roast, set aside. Add all vegetables and saute til tender.
Add ketsup, juice, vinegar, water and all herbs.

Simmer til slightly thickened approx. 15-20 minutes.
Place roast and rest of ingredients together in an oven safe dish and roast at 300 degrees for approx. 7 hours.

Check periodically and baste with vegetable mixture if roast is exposed.
Roast is done when pulls apart easily with a fork.

There will be ample "sauce" with this easy beef recipe. It pairs perfectly with garlic mashed potatoes and an arugula salad. This dish works well with a merlot or cabernet. Finish the meal with a lemon blueberry cake and homemade vanilla ice cream.
